I am in love with simple one pot meals, and this penne pasta recipe is definitely going to be on our menu plan in the future. With a few simple and affordable ingredients, you can make a meal everyone will love. What’s not to love about that?
Cheesy Sausage Penne Pasta Recipe
Since we all know how often past is on sale and practically free using coupons, having some in the pantry is a must in our home. I prefer a heartier pasta, so this penne pasta recipe is perfect for my family. I also love the fact that this recipe uses smoked sausage. I often grab this on sale and toss into the freezer. It’s a great easy to add protein, and everyone in our family loves it.
You can make this in a large oven safe skillet, like a cast iron skillet, but I prefer using a dutch oven. Trust me, once you invest in a dutch oven you will wonder how you ever managed without it. I prefer a ceramic or cast iron version for durability.
1 tablespoon olive oil
1 lb smoked sausage, sliced
1.5 cups onion, chopped
2 cloves garlic, minced
2 cups chicken broth
1 10 oz can Ro-Tel tomatoes and green chiles
1/2 cup heavy cream
8 oz penne pasta
1 1/2 cup shredded pepper jack cheese (use Monterey Jack if you like less spicy)
1/3 cup sliced green onion (optional)
Add olive oil to a large skillet or dutch oven over medium heat. Heat oil until almost smoking.
Add sausage and onions. Cook until lightly browned. About 3 minutes. Add garlic and cook another 30 seconds.
Add broth, tomatoes, cream, and pasta. Stir. Bring to a boil, cover skillet and reduce heat to medium-low. Simmer until pasta is tender. About 15 minutes.
Remove skillet from heat and stir in 1 cup of cheese. Top with remaining cheese and sprinkle with green onion if desired. Broil until cheese is melted and spotty brown. Watch it closely under the broiler! It doesn’t take long.
Since this penne pasta recipe is so rich, I definitely recommend adding a side salad or some veggies. You could easily toss in some broccoli, cauliflower, or your favorite vegetable into the mix in the last five minutes of cooking to make it a heartier one pot meal.
