Gluten Free Peanut Butter Cookies are one of my favorite treats. With only 3 easy ingredients you probably already have on hand in your kitchen, they are a perfect last minute treat. We love them, and I am sure you will too!
I am always seeing where my friends and even family members need gluten-free to avoid allergic reactions or discomfort. If I am making a special dessert, then it is important t me to be able to share with everyone. I hate seeing people feel left out, so making these gluten free peanut butter cookies are an amazingly easy solution. With 3 basic ingredients, it means I can literally make these in minutes, and never have to worry about shopping for something special at a pricey specialty foods store.
1 Cup Sugar
1 Cup Peanut Butter
Mix all three ingredients together in a medium bowl until well combined. You can use a hand mixer if you need to, but I found this easier to mix by hand. They will form a thick batter or rather wet dough. This is the consistency you want. Still moist, but able to fairly easily form into a ball. You just want this to be well incorporated and similar to the consistency of the inside of a peanut butter cup.
Next, you will preheat your oven to 350 degrees.
Roll the mixture into small balls about the size of a walnut and place 1″-2″ apart on a nonstick pan. I prefer using silicone baking mats to make sure there is no sticking. Once the pan is filled take a fork and lightly press on each cookie vertically and then horizontally, forming a crisscross pattern.
Next, you will bake them for 5-8 minutes. The time may be different as some ovens are different, be sure to check on the cookies often. The cookies are done once they start to crackle around the edges. I prefer softer in the middle, but you may want to cook longer for a crisp cookie.

A strawberry walnut salad is a great healthy and delicious option that comes together in just a few minutes. It’s ideal for late Spring or early summer months when berries are fresh, but if you have access to strawberries year round, it is a great side dish or meal that everyone will enjoy – even the kids!
Semi-homemade is the best way to go when you are trying to make something fast and easy like this strawberry walnut salad. I use Ken’s Lite Strawberry Vinaigrette , or you can make your own homemade if you prefer. There are often various vinaigrette’s out there that have berry infusion. Check your favorite brands, and look for a lighter option when possible.
1 Cup Baby Spinach
1/3 Cup Strawberries, Sliced
1/8 Cup Walnuts (candied if preferred)

Even though I buy baby spinach ready to use in store, I prefer to rinse and run through a salad spinner just in case. You just never know how clean it is. I also often mix in some mixed greens or other leafy greens into the salad for more flavor. Kale is a great option, but not everyone likes the flavor it offers. Test what your family prefers and use that in your strawberry walnut salad.
Once my spinach is ready, I chop up walnuts or pecans. I have found candied walnuts are nice on a salad, but add extra calories so not always necessary to have. Simply chop into the desired size and toss with your spinach, strawberries, and of course, the vinaigrette of choice.

With the nutrient-dense ingredients, it can easily be a great way to get some healthy proteins and vegetables into your kid’s diets. There is nothing that reminds me of childhood more than these easy Homemade Marshmallows. With all the flavor you expect, made at home and in any shape you want – these are a great fun treat to make with kids. They are inexpensive, easy, fun, and delicious. Just what you want and need in a fun snack.
To make your own homemade marshmallows, there are jut a few basic ingredients. In fact, the only thin you might not have on hand already is the unflavored gelatin. If you want to kick things up a bit, you could really use any gelatin for flavor. I especially love the idea of making them with kids and the kids creating multiple flavors. A fun addition is the fact that adding flavored gelatin also gives them a unique color!
Blend together 1/2 cup water, salt, and gelatin in a large bowl. I prefer using the large bowl from my stand mixer as it makes the rest of the process simple.
Combine the last half cup of water with the sugar and corn syrup in a large sauce pan over medium heat. Stirring frequently bring mixture to a boil. Use a candy thermometer to test. It will be ready when it reaches 240 degrees. If you do not have a candy thermometer wait for the mixture to reach the soft ball stage.
Slowly and carefully pour the hot syrup over the gelatin mixture and, with the stand mixer, mix on low. When all of the mixture is in the bowl, turn the mixer on its highest speed and mix for 8 minutes. Add vanilla and mix for 2 more minutes. The vanilla is quite strong with the given amount, so I would suggest adding a little less if you are not a “vanilla” person.
After mixing for the amount of time specified, your mixture should look like this:
Next, spread mixture in a greased baking sheet with sides and allow to cool for 4 hours or overnight.
Lastly, Combine powdered sugar and corn starch in a shallow pan. Cut marshmallows in desired shape and coat them in the powdered sugar mixture. Best if consumed within 1 month.
For added fun, you can decorate these homemade marshmallows with icing or candy bits to make them look like any holiday theme you prefer. This is a great way for kids to have fun helping you. They will love cutting the marshmallows into shape and helping you decorate them.
